Oven Roasted Potatoes
Ingredients
2 red potatoes, cut into fourths (3/4-inch chunks)
1 teaspoon dried rosemary leaves, crushed
1 teaspoon dried oregano
1 teaspoon of garlic powder
1/2 teaspoon of paprika
1/2 teaspoon of black pepper
1/2 teaspoon salt & olive oil - (optional)
Method
In medium bowl, marinate potato cubes with rosemary, oregano, garlic powder, pepper, paprika, pinch of lemon juice, and 1/2 tablespoon of olive oil, tossing to combine.
Preheat your oven to 350 degrees and roast potatoes on top oven rack for 20 minutes - 30 minutes or until crispy and brown.
Serve with a dip for a snack, with white rice for lunch, or over green salad for dinner.
